Time for Cake

I made this pink elephant cake for my neighbor girl’s golden birthday earlier this month. It was such a big hit that I’m thinking of making it again over the Memorial Day weekend. Can you believe it’s coming up already?

It’s honestly a very easy cake to make. The main trick is the elephant template, which I copied from my favorite birthday cake cookbook, Birthday Cakes: Recipes and Memories from Celebrated Bakers (Chronicle Books, 2004).

I made everything from scratch, but if you’re short on time, you can make the cake from a box and use prefab icing to spread on the cake. Use edible dragees or cake sparkles or licorice candies for the decorations.

The only criticism I’ve heard so far is from my father. He says the elephant needs a tail, so he made me a template for that. I’ll have to give it a try.
